How to proceed

Preparation:

ca. 40 minutes

Simmer:

ca. 80 minutes

Total time:

2 h

Halve the onion and cut it into thin strips. Dry the stew thoroughly by dabbing it. Brown it in a pan, portion by portion, with a little oil, transfer to a pot. Add the onion to the last portion of meat and brown briefly, stirring. Turn-you off with half the Guinness. Pour this portion into the pot as well. Add the herbs, broth and remaining Guinness. The meat must be coated with liquid. Bring to boiling. Cover lightly and simmer over low heat for approx. 80 minutes, until the meat is cooked.

Halve or quarter the carrots lengthwise, cut them into bite-sized pieces. Cut the potatoes into approx. 1.5 cm thick. Add carrots and potatoes to the meat approx. 25 minutes before finishing cooking and continue to cook over low heat. Dissolve the corn starch in a little cold water and add it to the stew. Bring to a boil, simmer for approx. 5 minutes, until the sauce binds. Season with salt and pepper. You may be interested to read cabbage pesto purple recipe/ homemade pomegranate liqueur.
